Recipe: Breaded Chicken


I eat a lot of chicken for protein, but as with anything when you eat a lot of something it can get quite boring and you start to dread your meals. I got a new food processor recently and I actually don’t know how I lived without one for so long. It only cost £14 in Argos and its really good.
 


 

Last weekend I was dreading the thought of another chicken breast so I decided to put my own twist on it. I got two slices of wholemeal bread and out them in the blender. I added mixed herbs to the bread and blended. I took it out and placed in a bowl.

I broke an egg into another bowl and whisked with a fork. Then in a third bowl I put coconut flour.
 
I got the chicken breast dipped it in the coconut flour.
 
 
 
then the egg
 
 
 
and finally dipped it in the bread crumbs until completely covered.
 



 

Put in the over for 20 minutes until golden brown and crisp.
 
  
 


The coconut flour really makes a difference. Coconut flour is a great healthy flour alternative. Made with the meat of coconuts, coconut flour is gluten free and grain free. It is loaded with nutrients that offer numerous health benefits and it is also high in fibre and protein.
 
I bought a large bag of coconut flour online for £5. Its great for healthy baking recipes.
