This week I baked my first cake and it was a gluten and dairy free cake. Recipe below.
1/4 cup of cocoa powder
1/4 cup of coconut flour
1 1/2 teaspoons of gluten free banking powder
1/2 teaspoon of cinnamon
Pinch of sea salt
4 eggs
1/4 cup of honey
1 teaspoon of vanilla extract
1/4 cup of melted coconut oil
Combine all and mix until smooth. Spoon into baking tin and bake for 35-40 minutes. Remove from oven and let cool.
Add frosting: I mixed almond butter, cocoa powder, honey and a teaspoon of hot water to make a chocolate syrup and layered over the cake. Then added greek yoghurt and berries.
Other meals I had this week:-
Chocolate protein pancakes
Mix a banana, oats, chocolate whey protein , 1 egg, pinch of cinnamon.
Chickpea burger
Blend a tin of chickpeas, carrots, pinch of salt, cumin, paprika and 1 egg, roll the mixture into small balls and roll in coconut flour and bake for 30 minutes. Serve with greek yoghurt, or hummus and a green salad.
Baked Potato:
Rub coconut oil over the potato and a pinch of salt, then wrap in tin foil and bake for 40-50 minutes.
Cut open and add your choice of toppings, I added salmon and feta cheese and put back in the oven to melt. Serve with spinach and sundered tomatoes.
Prawn stir fry
Sauce: Add prawns and vegetables to the pan (garlic, onion, carrot, cauliflower, broccoli). Season with ginger and cumin. Add vegetable stock. Use coconut flour to thicken.
