Clean Eating-Shepherds Pie

 

Mexican Shepherd's Pie

 
Shepherd's pie is one of my favourite dishes as it is such a comfort food.There is no need to cut it out of your diet if you eat it clean. Shepherd's Pie is one of those dishes where you always want seconds. Try resist! The great thing about shepherd’s pie is that there are so many variations you can make. I found this recipe on The Gracious Pantry and loved it. Make a large portion so that you can bring some for your lunch.
 

Bottom Layer:

1.5lm lean, minced beef
1tbsp garlic powder
1tbsp cumin
1tbsp chilli powder
1tbsp olive oil
1 can diced tomatoes (no sugar added)
1 can kidney beans (no sugar added-drained)
1lb frozen corn

Top Layer:

4 large sweet potatoes/ white potatoes [Remember white potatoes are fine once eaten in moderation so don't layer so much on top]
2 tbsp garlic powder
1 cup of milk
1 cup of chicken broth
1tbsp cumin

Step 1- Boil the potatoes in a large pot until soft
Step 2- While the potatoes boil, place the mince and spices in a large frying pan and cook until meat is well cooked through.
Step 3- Transfer the meat to the casserole dish and spread across the bottom.
Step 4- Next layer the tomatoes, corn and kidney beans over the mince.
Step 5- When potatoes are done, drain them.
Step 6- Peel the potatoes, add the rest of the top layer ingredients to the potato and mash until smooth.
Step 7- Spread the mashed potatoes over the top of the meat, corn, beans and tomatoes. Spread evenl.
Step 8- Bake for about 30 minutes. The idea is to brown the top of the potatoes slightly.
