Cauliflour Pancakes




So for last night’s dinner I decided to try something new. I was researching low carb recipes and came across these cauliflour pancakes. They looked tasty and easy to make so I decided I would give them a go. They are really quick to make and they taste the same as a potato pancake but a lot healthier. I unfortunately used a really crap frying pan and they kept falling apart on me but they still tasted nice.

 

Ingredients:

·         Head of cauliflour

·         2 eggs

·         cheddar cheese (grated)

·         Cumin (other whatever spice you want to season with)

·         pink Himalayan salt

 
Method:
 
Cut cauliflower into florets & cook in boiling water for about 10 minutes. Drain. Mash the cauliflower while still warm. Stir cheese, eggs, cumin or cayenne (whatever spice you prefer) & salt to taste. [ You can also add in whole wheat flour- if you do add hot water as the mixture will be very thick].
 
Pour olive oil on to a frying pan over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side.
Makes 6 pancakes
