So for last night’s dinner I decided to try something new. I
was researching low carb recipes and came across these cauliflour pancakes. They looked tasty and easy to make so I decided I would give them a go. They are really quick to make and they taste the same as a potato pancake but
a lot healthier. I unfortunately used a really crap frying pan and they kept
falling apart on me but they still tasted nice.
Ingredients:

Head of
cauliflour
·
2 eggs
·
cheddar
cheese (grated)
·
Cumin (other
whatever spice you want to season with)
·
pink
Himalayan salt
Pour olive oil on to a frying pan over medium-high heat. Form the cauliflower mixture into patties about 3 inches across. Cook until golden brown & set, about 3 minutes per side.
Makes 6 pancakes
