Chickpeas are inexpensive and surprisingly good for you. They
are an excellent source of soluble fibre which is not only heart-healthy, but also helps to stabilise blood sugars. They are
also an excellent source of protein, are low in fat, and have high
levels of calcium, magnesium and iron. Because they are high in fibre they are very
filling and will help control your hunger pangs.
This week I made chickpea burgers for dinner and a falafel
sandwich for lunch.
Ingredients:
- Wholemeal bread 2 slices
- 1 large egg
- 1 can of chickpeas
- 2 tablespoons of wholemeal flour/Coconut flour
- 1 ½ teaspoons ground cumin
- 1 ½ teaspoons ground coriander
- 1 carrot
- 1 onion
- 1 clove of garlic
Method:
- Add chickpeas (drain water),egg, carrots, garlic, coconut flour, cumin and coriander seasoning to the blender. Process until evenly mixed.
- Fry onions until translucent.
- Add chickpea mix in a bowl with the onions.
- Toast the slices of bread and then add to blender to make bread crumbs. Put in bowl with the rest of the mixture.
- With your hands create thick burgers from the mix and place on baking tray.
- Cook in oven for 15 minutes until brown.
