Dessert- Nakd Bars

Eating clean does not mean you can't treat yourself to a tasty dessert. Recently I have been obsessed with Nakd bars. They are 100% natural, made of just raw fruit and nuts. The bars are vegan, dairy-free, gluten-free and also wheat free, and come in a range of flavours. They do not add any sugar, syrups or mysterious additives to your food. The cocoa orange bar is made purely from dates, raisins, cashews and cocao. They are so tasty and most importantly they are healthy. They are quite small and quite expensive so I decided this weekend I would make my own. They are so easy to make and such a nice treat in the evening after dinner or after lunch with a cup of green tea.

Ingredients:

100g pitted dates
60g cashew nuts
47g raisins
25g coconut flour (optional)
15g carob powder or cocoa powder
1 tsp orange rind
1tbsp orange extract

Method:

Put all the ingredients in a blender until chopped up into tiny pieces and the texture is sticky. I rolled the mixture into 6 balls and made 2 bars also. Put them in the fridge for about 2 hours to set and then they are ready to eat.

If you don't like orange flavour just leave it out and add raspberries. Pick and choose your flavourings.

This dessert because of its high nut content it a good source of protein. Cashews are quite high in iron, too, so it is good for healthy red blood cells. I use carob powder as a substitute for cocao powder. Raw Carob Powder is full of nutrients, including B vitamins, calcium, iron and other minerals and even protein. It is low in fat and promotes healthy cholestrol and blood sugar levels.

However, because of high nut content it can be high in fat, but remember it is full of healthy monounsaturated fats.  So rememver to eat in moderation!!!

Enjoy xxx
