Healthy Pizza

I was craving some pizza yesterday so I tried to fight away the temptation and made a healthy version instead. This was really easy and quick to make. Perfect for an evening snack when you come home from work. I also brought some for lunch today as well.

Ingredients:

  • Zucchinis-4
  • Virgin olive oil- 2 tbsp
  • Garlic cloves-2 (pressed)
  • Pesto
  • Tin of tomatoes
  • Cherry tomatoes
  • Feta cheese
  • 2 breasts of chicken

Instructions:

1. Pre heat the over to 180 C and grease two medium casserole dishes.
2. Cut the zucchinis in half lengthwise, then gently scrape out all the seeds- hollowing it out.
3. Mix olive oil and pressed garlic together and brush into bottom of the zucchinis.
4. Spread 1 tbsp. of pesto on the bottom and some sauce from tin of tomatoes.
5. Place cooked chicken, feta cheese and cherry tomatoes on top and season.
6. Bake for 20-25 minutes until the zucchinis are soft.


Ready to go in the oven.
