Clean Eating Jaffa Cakes

Here is the recipe for Gluten-Free Jaffa Cakes. These were inspired by wallflowergirl. I love Jaffa cakes, but the problem is when I have one I have to then eat the whole packet, so I needed to find a healthier alternative and was so excited when I found this recipe. It is easy to make and really tasty!

1.1/2 cups ground almonds
1 tbsp. orange zest or use a rind of an orange
1 tbsp. baking powder
1 large free range egg
4 tbsp. of coconut oil
6 tbsp. of maple syrup/rice syrup or honey
Sugar-free orange jelly
100g of dark chocolate (80%)

  1. In a large bowl stir together ground almonds, orange zest and baking powder. Then mix in the eggs, coconut oil and maple syrup/honey or rice syrup until a smooth, thick batter is formed.
  2. Scoop a tsp of batter into your muffin tin or muffin cases. It should fill about half of the tin. Bake in oven for 15-20 minutes until golden brown.
  3. Leave to cool on wiring rack for 30 minutes.
  4. I used sugar free orange jelly and scooped some on to each cake. Set in fridge for few minutes.
  5. Melt 80% dark chocolate. I melted mine in the microwave. Break up into small pieces. Don't overheat.
  6. Use a small spoon to add chocolate to the top of each cake.
  7. Leave to set in the fridge for a few minutes and they should be ready to eat!
