Lunch Ideas


Two recipes I cooked this week:

Chicken and Leek in a white wine sauce



This is yummy and tastes just like chicken a la king.

Ingredients:

Chicken
Leek
Onion
Red Pepper or whatever veg you wish
1/4 cup of white wine
vegetable stock
coconut flour (to thicken)

Method:

Cut up the chicken into small pieces and cook until brown.

Add the rest of the vegetables to the pan.

Add the stock, white wine and some flour to thicken.

Serve with baked potato for lunch or have just on its own for dinner.


Veggie Burgers



Ingredients:

Canned chickpeas in water
Carrot
Courgette
Onion
Garlic
Egg
Cumin
Garlic powder

Method:

Put all the vegetables into the blender. Put into a large mixing bowl.

Add the chickpeas to the blender. Then put into the mixing bowl and combine with the veg.

Add in the spices.

Add egg and blend into the mixture.

Make burger shapes with your hands and place in the oven for 20 minutes until golden brown.

Serve: with a salad.
